Jaggery is golden brown coloured, soft textured, salty sweet tasting, unrefined cane sugar made from boiling down sugarcane juice. It is considered to be one of the most nutritious form of sugar.

Jaggery is favoured as being healthy as it, in addition to containing sucrose and glucose", has good amounts of minerals such as iron, mangnesium, potassium, sodium, selenium and manganese.
