Corn flour cakes: cream together 100gms of margarine and 200g sugar and beat in 2eggs. Add 100gms self raising sugar and 100gms kwality corn flour and mix thoroughly. Add a little flavouring essence. Fill into small well greased tins and bake in moderate oven for about 20minutes until golden brown., Blancmange: put 35gms of kwality corn flour in a basin. From 570ml. Milk add sufficient to the corn flour to make a smooth paste free from lumps. Boil remainder of the milk and whilst still boiling pour over the paste stirring constantly. Add 30gms sugar to the mixture and steam for 10 minutes. Add a few drops of flavouring and pour into a mould already rinsed with clean water. Allow to cool and then turn out. Serve with jam or fruit.
