In Israel, falafel has first found its way into the pita bread. Israelis were also the first to spread it to Europe and the US, somewhere around the early 1970s. A common theory suggests falafel was invented some 1000 years ago by the Egyptian Copts, who brought it with them to the rest of the Middle East. Falafel is also very versatile. The traditional way of serving it is to stuff two or three pieces in a pita, along with lettuce, cucumber, tomato and a dollop of tahini. But it can also be eaten - hot or cold - as an appetizer or as part of the main course.
