Mushroom Paste With Cajun Potato

Preparation

Step 1 :

Boil baby potatoes with peel until the insides have softened.

Step 2 :

Heat oil in pan, flatten boiled potatoes with hand to make a tikki (with the peel still on them). Then fry them so the surface becomes crispy. Take out of oil and sprinkle oregano, basil, chilli flakes and chaat masala. Keep this aside (Don't start eating it yet).

Step 3 :

Blend the mushrooms. You can use different types of mushrooms. Each one gives a different consistency and taste to this dish.

Step 4 :

Heat more oil, add some curry leaves, let them get fried, then add curd. Stir and cook for 5 minutes. Then pour the mushroom paste into it and add some salt. Cook for 15 minutes on low flame.

Step 5 :

Then increase flame and cook till the paste becomes dense. Cover the baby potatoes in this paste and enjoy eating them! Eat fresh (dont let potatoes become soggy).
