Preparation
Step 1 :
Preheat the oven to 170°C and line muffin tins with paper cases. Combine the flour, cocoa, baking powder and bicarbonate of soda in a bowl.
Step 2 :
In another bowl, cream the butter and sugar, beating well and when you have a soft, pale mixture beat in the food colouring and the vanilla.
Step 3 :
Into this coloured mixture, still beating, add 1 spoonful of the dried ingredients, then 1 egg, followed by some more dried ingredients, then the other egg, followed by the rest of the dried ingredients.
Step 4 :
Finally beat in the buttermilk and the vinegar and divide this batter between the 24 cases. Bake in the oven for about 20 minutes.
Step 5 :
Leave them to cool on a wire rack till absolutely cold.
Step 6 : For the Filling
Scoop out a small portion from the top of cupcake. Fill it with nutella and put the cut portion back. Refrigerate for some time before icing.
Step 7 : For Icing
Cut the dark chocolate into small pieces and melt over double boiler or in microwave. Add Amul cream and mix well. If required microwave for 30 seconds. Put the ganache in icing bag and using 1 M tip swirl a rose.
