It is simple and quick meal to prepare without compromising on flavor. It is also filling, healthy and nutritious.

Preparation

Step 1 :

Wash and cook brown rice with bay leaf and salt. Then set aside.

Step 2 :

Heat pan on a medium flame with oil, cumin seeds allow them to splutter.

Step 3 :

Add finely sliced onions and sautee till it loses color, add ginger- garlic paste and fry for a few more minutes.

Step 4 :

Add slit green chilies, edamame, mint, coriander/cilantro saute for a while.

Step 5 :

Then add the cooked brown rice and mix thoroughly. Serve it with Mint raita.
