Preparation
Boil the carrots until cooked perfectly.
Drain excess water and allow to cool completely. Then grind it to make a smooth puree.
Sieve the wholewheat flour, jowar flour, baking powder and salt together 3-4 times. (Do not add ragi flour now). Keep it aside.
Melt the bitter chocolate chunks with 1/4 cup sunflower oil in microwave. (Microwave at 640 degree Celsius for 15-20 seconds, stirring after every 5 seconds). You may use double boiling method also.
Once done, keep it aside to cool down completely.
Now beat the eggs in a bowl. To this, add vanilla essence, the remaining 1/4 cup sunflower oil and powdered jaggery and beat again until well combined.
Now divide this egg mixture into two.
To one half add the melted chocolate mix and combine.
To this chocolate mixture, add the ragi flour also and mix well.
Then add in half of the flour mixture sieved earlier.
Add 2-3 tbsp of water if the batter is too thick.
Next, to the second half of the egg mixture, add the orange juice, orange zest and pureed carrots.
Mix well until combined.
Next add the second half of the flour mixture too and mix well.
Now prepare the baking dish with oil and parchment paper.
Preheat the oven to 170 degree centigrade.
Pour the chocolate batter into the baking dish.
Then pour the orange mix to the dish.
With a toothpick, create swirl patterns.
Next add the chocolate chips and chocolate shavings on the top.
Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
Allow to cool completely, slice and enjoy the delicious and healthy chocolate orange brownie bites.
