Rice Cheesy Balls

An indulgent recipe mainly prepared with leftover rice and seasonings! The cheese takes the flavour to another level.

Preparation

Step 1 :

In a medium bowl, whisk cheese, parsley, pepper and 1 teaspoon of salt. Cover and set it aside.

Step 2 :

Mash leftover rice and add it to the cheesy mixture. Add boil peas and corn.

Step 3 :

Make a thin paste of cornflour. If you eat eggs, you can use eggs.

Step 4 :

Pour breadcrumbs into a pile on one end of a cutting board. Dampen hands and roll rice mixture into 2.5cm balls, then dip in cornflour and coat each one with breadcrumbs.

Step 5 :

Add one small piece of cheese and then make the balls. In a small deep frying pan, heat olive oil.

Step 6 :

Fry 6 rice balls 6, turning them often to ensure even browning. Drain them on kitchen paper and serve warm.
