Lasagna in a Parmesan Basket with Vegetables

This classic Italian dish provides the perfect blend of richness in taste and nutrients. It consists of a parmesan basket, stuffed with freshly made lasagne sheets. These are layered alternately with home-made marinara sauce and seasoned cheddar cheese with an accompaniment of vegetables tossed in vinaigrette.

Ingredients

Cooking Steps

For Parmesean Basket

Step 1 :

Heat a non-stick pan over a medium flame.

Step 2 :

Create a circular layer of grated parmesan cheese on the pan.

Step 3 :

Once the cheese has melted and turned brown, flip it and cook the other side for a couple of minutes.

Step 4 :

Remove the parmesan sheet and place it over an over-turned bowl. Shape the parmesan sheet so that it adheres to the bowl. As the cheese cools, it will become firm.

For Lasagne Sheets

Step 1 :

In a bowl, combine the all-purpose flour and egg and knead the dough into a ball.

Step 2 :

Wrap the pasta dough in cling film and allow it to rest for a minimum of 30 minutes.

Step 3 :

After 30 minutes, roll out the dough into a thin sheet.

Step 4 :

Cut circles out of the pasta sheets using the bowl that was used to create the parmesan basket as reference.

Step 5 :

Cook the freshly-made pasta in boiling salted water for 45 seconds.

For Marinara sauce

Step 1 :

In a large pan, stir fry sweat onions and garlic in olive oil.

Step 2 :

Once the onions turn translucent, add the crushed tomatoes and tomato puree, and stir well.

Step 3 :

Season the tomato sauce with dried oregano, chilli flakes, sugar, salt, and pepper. Cover the pan and allow the sauce to cook for 20 to 30 minutes over a medium flame.

For Combining the Salad Dressing and Vegetables

Step 1 :

Combine olive oil, jalapeno pickle juice, sugar, salt, pepper, and mixed Italian seasoning in a bowl.

Step 2 :

Toss the salad vegetables in the dressing until evenly coated.

For Bringing together the different components of the dish (i.e., lasagne sheets, marinara sauce, cheese mix for the lasagne filling, salad dressing).

Step 1 :

Using the same container used to shape the parmesan bowl, spread a layer of the marinara sauce at the base of the bowl, followed by a lasagne sheet. Cover the lasagne sheet with another layer of sauce, followed by a dense layer of cheese mix (seasoned). Repeat this process until the layers reach the rim of the container.

Step 2 :

For the final layer, add a generous portion of cheddar and parmesan (for crispiness), and sprinkle some mixed Italian herbs.

Step 3 :

Bake the dish at 200°C for about 45 minutes, until the top layer melts and crisps up.

Step 4 :

Allow the lasagna to cool for 5 minutes before using a knife to separate the the edges of the lasagna from the container.

Step 5 :

Remove the lasagna from the container and place it inside the Parmesan basket.

Step 6 :

Arrange the salad around the parmesean bowl and serve.
