Preparation
Step 1 : Prepare white sauce
Heat one tablespoon plain butter and add 2 spoons of wheat flour to it. Sauté for around one minute on low flame.
Step 2 :
Add 2 cups of milk and mix it well using a hand blender. Boil the milky mixture, stirring it continuously till it thickens.
Step 3 :
Add salt and pepper and some cheese to the thick milky sauce and your white sauce is done.
Step 4 :
Blanch the chopped spinach for 2 minutes, strain it and press between a cotton napkin so that all the water is removed.
Step 5 :
Boil the corn kernels well and strain them to remove the excess water completely.
Step 6 :
In a large bowl, add spinach, corn, chopped capsicum and white sauce. Season it with some chilli flakes, oregano and pinch of salt and give it a nice mix.
Step 7 :
Take two – four slices of bread and apply some garlic butter on both sides. Spread a generous amount of stuffing on the bread slices, grate some cheese over it and cover it with the other slice. Grill the sandwich until it turns golden brown.
Step 8 :
Your spinach corn cheesy sandwich is ready. Serve it with tomato ketchup.
