Preparation
Step 1 :
This is different from the regular ‘double ka meetha’. First, prepare rabdi. Boil 1 litre milk for about 20 minutes on medium flame till it reduces to half the quantity. Stir constantly. Add finely cut almonds 5 minutes before taking off the rabri. Keep it in the fridge.
Step 2 :
While preparing the rabdi, toast the bread slices (5-6 slices) and then fry them in ghee and oil mixture till they turn golden brown (cut each slice into 4 pieces, not more than that).
Step 3 :
Then prepare the sugar syrup by boiling half litre water with 5 spoons sugar and 3 spoons honey. Add finely chopped apricot into the boiling sugar syrup (this gives a unique flavour to the sweet which makes it different from the regular ‘double ka meetha’).
Step 4 :
After the syrup is done, immerse the bread pieces into it for just 2 minutes and remove the excess syrup. Now garnish the sweet with rabdi and dry fruits (kaju and kishmish fried in ghee).
Step 5 :
Rabdi should be added just when you are about to eat. This makes the sweet different and delicious.
