Quinoa Pumpkin Soup

A delectable soup when you want to have something light but filling.

Preparation

Step 1 :

Take pumpkin, peel and deseed it. Cut it into cubes.

Step 2 :

Take the onion, peel and cut it into small pieces.

Step 3 :

Alongside, take half a cup of quinoa, add one cup of water and boil it on medium flame for 20 minutes.

Step 4 :

Boil the pumpkin and onion with adequate water for 20 to 30 minutes (the pumpkin should get cooked).

Step 5 :

Once it cools down a bit, mix the boiled pumpkin and onion in a blender with salt and pepper. Add water if necessary.

Step 6 :

Take it from the blender and heat it again.

Step 7 :

Pour the soup in the bowl and top it with the required quantity of quinoa. Mix well.

Step 8 :

Top it with feta cheese and coriander leaves.
