Quinoa Chocolate Cake

I love to bake cakes, especially for my toddler daughter. This was an experiment where I used quinoa instead of the regular white flour. It turned out to be surprisingly yummy!

Preparation

Step 1 :

Preheat oven to 350 degrees F (175 degrees C). Grease a cake pan. Dust it with all-purpose flour.

Step 2 :

Mix all the wet ingredients together (butter, eggs, milk, and vanilla) in a blender until smooth. Add the cooked quinoa slowly into the blender and mix it thoroughly with the wet ingredients.

Step 3 :

Mix sugar, cocoa powder, baking powder and baking soda in a large bowl. Add this mixture in three parts into the quinoa mixture until the batter is well combined. Add chopped dried fruits and chocolate chips into batter. Pour the mixture into the greased pan.

Step 4 :

Bake in the preheated oven for 40 to 45 minutes, until a toothpick inserted in the centre of the cake comes out clean. Cool it on a wire rack. The cake tastes better when it is cooled completely.
