Detox Salad Meal

A fresh and filling but light salad which can be enjoyed as a meal.

Preparation

Step 1 :

Prepare the dressing by taking the rind of half a lemon, juice of a full lemon, 2 tablespoons olive oil, salt and pepper. Mix well with a fork. Depending on your taste, you can add more or less of the dressing.

Step 2 :

Dice all the vegetables to a similar size, including the paneer/ tofu/ fresh mozzarella.

Step 3 :

Cook the quinoa with salt and pepper. Ensure that it is dry and separates easily when stirred with a fork.

Step 4 :

Use a large bowl and toss together all the veggies and quinoa. Add the dressing and toss well.

Step 5 :

Keep it aside for 30 minutes for the flavours to combine. Garnish with cilantro before serving.

Step 6 :

You may also top it with roasted peanuts, pine nuts or sunflower seeds.
