Chicken Noodle Soup

This a healthy and quick recipe of Vietnam, also known as pho. Enjoy it as an appetiser or a whole meal by increasing the amount of noodle and chicken.

Preparation

Step 1 :

To the water, add ginger, chicken, star anise, cinnamon, salt, whole pepper, roots of coriander, bulb of spring onion, Thai red chilli, soya and fish sauce. Bring it to boil over high heat.

Step 2 :

Remove any foam that appears when preparing the chicken stock. Reduce the water till 400ml or till the chicken gets cooked.

Step 3 :

In a separate bowl, place the rice noodle with boiling water. Let the noodle become tender. Once cooked, drain the water.

Step 4 :

Using a spoon, remove coriander roots, star anise, cinnamon, ginger and black pepper from the stock.

Step 5 :

Divide noodles between serving bowls. Pour the stock mixture of chicken and onion over the noodles.

Step 6 :

Garnish with coriander, chopped spring onion, pepper powder and lime juice.
