Lemon Millet Rice

Millet is one of the healthy whole grains. Apart from being gluten free, they are also alkaline and help reduce digestive problems. To make this lemon millet rice, I have used foxtail millet known as navane in Kannada. However, you can use little millet, kodo millet or barnyard millet too. This can be served for breakfast or a meal. Enjoy it with sides such as curd, pickle, vegetable salad or papads.

Preparation

Step 1 : Cooking Millets

Add ½ cup millet to a pot and wash thoroughly. Drain completely. Add 1 ½ cups water, salt as required and allow it to soak for a while. You can skip the soaking bit if you wish.

Step 2 :

Cook on a medium flame until all the water is absorbed. Ensure that the millet is slightly soggy. Cover the pot and simmer on the lowest heat until completely cooked. Fluff it gently with a fork and let it cool down completely.

Step 3 : How to make lemon millet

Heat a pan with oil. Add mustard and when it begins to splutter, add chana dal, urad dal, cashews, red chili and green chili.

Step 4 :

When the dals turn slightly golden, add curry leaves, ginger and green chilli.

Step 5 :

Once the curry leaves turn crisp, switch off the stove and add turmeric and hing.

Step 6 :

Add the cooled down millet and squeeze in the lemon juice.

Step 7 :

Mix everything well.

Step 8 :

Serve lemon millet rice with curd, veg salad, papad or pickle.
