These multi-coloured, nutritious multigrain parathas are the prefect healthy breakfast for everyone.

Step 1 :

Mix all the flours.

Step 2 :

Add sugar, ajwain seeds, the green paste mix & salt to taste.

Step 3 :

Divide the flour in 2 equal parts and set aside.

Step 4 :

Make puree of boiled beetroot in a mixer, similarly blanch the spinach and make puree.

Step 5 :

Knead the dough with these purees separately for beetroot & spinach. You get 2 dough one in red colour & other in green colour.

Step 6 :

Make 2 parts of each dough.

Step 7 :

Roll thick roties of same diameter for all the 4 doughs.

Step 8 :

Place the red roti, apply oil & wheat flour a bit on it, then place the green one, then again apply oil & flour on it. Repeat the process till you get a thick roti with four layers of alternate colours.

Step 9 :

Slightly roll the roti so all the layers are bound together. Now start rolling the roti from one side to form a cylinder.

Step 10 :

Now cut the dough in equal parts (you will see beautiful layers of the alternate colour.

Step 11 :

Start rolling each paratha applying flour and bake over a hot flat pan. Apply oil as needed on both the sides.

Step 12 :

Tada! Your multi-coloured, nutritious multi grain parathas are ready. You can serve them with white butter or tomato ketchup.
