Achari Paneer Quinoa Khichdi

This delicious, super-healthy quinoa khichdi is a great meal-in-one; it makes it an ideal vegetarian option at the dinner table.

Step 1 :

Cut the paneer slab into 1 cm thick slices.

Step 2 :

In a bowl, mix mustard oil, achari masala, ginger-garlic paste, lemon juice and salt.

Step 3 :

Gently, mix the paneer slices with this achari mixture and allow it to sit for minimum 2 hours.

Step 4 :

Wash soaked quinoa and moong dal 2-3 times with clean water.

Step 5 :

In a pressure cooker, heat ghee.

Step 6 :

Add cumin seeds, asafoetida, green chilli, grated ginger and turmeric.

Step 7 :

Now, add quinoa, moong dal, chopped carrot, cabbage and salt along with 3 and 1/3 cups of water. Pressure cook it for 4-5 whistles.

Step 8 :

Heat a non-stick pan, with oil in it.

Step 9 :

Place paneer slices and cook for 30 seconds on both sides.

Step 10 :

To serve, arrange paneer slices such that it forms a well shape.

Step 11 :

Place the quinoa khichdi in the middle of the plate and garnish it with chopped coriander leaves.
