Step 1 :
Chop spring onions (white) and leaves (green) separately.
Step 2 :
Boil the broccoli in 3 cups of water. Once done, store the broccoli water separately.
Step 3 :
In a large saucepan, cook the spring onion (white), add garlic, maida and butter over moderately low heat, stirring occasionally, until it softens.
Step 4 :
Add the broccoli boiled water, 2 cups water and bring the mixture to a boil.
Step 5 :
Add broccoli and sweet corn, simmer the mixture.
Step 6 :
Cover it partially, for approximately 10 minutes until the soup thickens.
Step 7 :
Season it with salt and pepper, stir well over moderately low heat.
Step 8 :
In a small bowl, beat the cream until it is thickened, add a pinch of salt to it.
Step 9 :
Pour the soup into bowls, garnish with a dollop of cream and draw a knife through it to form a pattern on each serving.
Step 10 :
Sprinkle chopped spring onion leaves on it.
