These pancakes are easy to make, tasty and tummy filling for breakfast.

Step 1 :
Combine milk with vinegar in a medium bowl and set aside for a few minutes.
Step 2 :
Whisk wheat flour, sugar, baking powder, salt and grated ginger together, in a large bowl.
Step 3 :
Whisk egg and melted butter into the milk mixture.
Step 4 :
Pour the milk mixture into the flour mixture and whisk until lumps are gone. Ensure not to over mix the batter.
Step 5 :
Heat a non-stick pan over medium heat and add a little butter on it.
Step 6 :
Once heated well, pour 1/4 cup of batter to make the pancakes.
Step 7 :
When bubbles begin to form and the edges of the pancake start to darken drop whole cranberries into the pancake. Flip it immediately.
Step 8 : For the topping
Melt white chocolate wafers in the microwave in 20 second intervals, whisking in between until thoroughly melted.
Step 9 :
Once done, stack the pancakes over each other on a plate. Using a fork, drizzle the melted wafers on the stacked pancakes.
Step 10 :
Garnish the top of the pancake with lemon zest and chopped pistachios. Add maple syrup if desired.
