Wash and dice carrots, slice onion and peel garlic.
In a pan, add oil and roast garlic and onion. Once the onion turns golden brown and aromatic, switch off the gas.
In a pressure cooker, add water, carrots, salt and sugar. Cook it for 5 minutes.
Now, add roasted onion and garlic to it and cover it with a lid. Cook it for about 5 whistles.
Once done, set it aside for it to cool down.
Wash fresh coriander and mint leaves, break them into small pieces by hand and place them in a bowl.
Now, chop salted pistas and cheese cubes. De-seed cucumber and chop it into small pieces.
Sprinkle salt and pepper over the cucumber mixture and set it aside.
Now, open the pressure cooker, grind the mixture in batches.
Once done, place it in a container and bring it to a boil. Season the soup as required, add lemon juice and vinegar as per preferred taste.
Add at small piece of butter to enhance its taste.
Pour the soup in a bowl and garnish it with the cucumber mixture prepared earlier, serve it hot.
