Palak is loaded with great fibers, it is tasty and provides a healthy twist to the rice. This is a simple yet elegant dish and requires very less time to prepare.

Step 1 :

Simmer chopped spinach and green peas in a pan, with a little oil. Allow it to cook well.

Step 2 :

Once done, grind the cooked spinach and peas in a grinder. Keep it aside.

Step 3 :

Meanwhile cook the rice with water and a pinch of salt.

Step 4 :

In a pan heat oil, add cumin seeds once it beings to splutter, add hing and chopped green chillies.

Step 5 :

Add chopped onions and saute till golden brown.

Step 6 :

Add tomatoes and let it cook for few minutes.

Step 7 :

Now, add salt and turmeric powder to the mixture. And the ground spinach paste and let boil for 1-2 minutes on low flame.

Step 8 :

Add cooked rice to it and mix it well to combine.

Step 9 :

Once done, garnish the rice with chopped coriander leaves.
