Gongura Bhaaji

Gongura is a leafy vegetable that is sour in taste. This is a traditional Konkan recipe that requires few ingredients. It also contains essential minerals like calcium, potassium, magnesium and iron.

Step 1 :

Soak rice and chana dal separately in water.

Step 2 :

Clean gongura leaves. Ensure to take only the leaves and not the stem.

Step 3 :

Peel garlic and chop into medium size pieces.

Step 4 :

Now, pressure cook soaked chana dal and rice separately.

Step 5 :

Meanwhile, chop the gongura leaves. Once the dal and rice are cooked, cook the leaves in a pressure cooker by adding 1/2 cup of water.

Step 6 :

After cooking the leaves for 10 minutes, remove excess water from it and keep it aside.

Step 7 :

In a pan, heat oil, once done, add mustard leaves and let it splutter.

Step 8 :

Now, add chopped garlic and saute till it turns light brown. Add turmeric powder and hing to it.

Step 9 :

Add cooked rice, chana dal and gongura leaves to it. Mix it well and let it cook.

Step 10 :

Now, add red chilly powder, salt and jaggery. Let it cook for 5 minutes.

Step 11 :

Serve it hot with rice or roti.
