Malai Kulfi with Dry Fruits

This is a very easy kulfi recipe made all the more tasty with the addition of dry fruits. This is a perfect recipe to impress guests on Holi.

Step 1 :

In a vessel boil water and add almonds to it. Allow the almonds to cook for a minute, remove from gas and strain the water.

Step 2 :

In a mixer, pulse the blanched almonds.

Step 3 :

In a bowl, add ground almonds, condensed milk and cream together.

Step 4 :

In a vessel, heat the milk. Once done, infuse a pinch of saffron in it and set it aside.

Step 5 :

Let the milk cool down to room temperature and then add it into the bowl.

Step 6 :

Toast some pistachio and chop them coarsely.

Step 7 :

Add pistachios to the rest of the ingredients and mix it well together.

Step 8 :

Set them in steel glasses or in small mud pots and cover it with butter paper or aluminium foil.

Step 9 :

Freeze it for 4 hours and serve cold.
