Step 1 :
To make the dough: In a small bowl, add dry yeast, sugar and 3 tbsp lukewarm water and keep it aside. In another large mixing bowl, add all purpose flour, oil and salt. Once the yeast is getting raised, pour that into the flour mixture and knead the dough.
Step 2 :
Add more lukewarm water and knead some more. Make a soft dough. Now put the dough in an oil greased bowl and rest it for 3 hours in a warm place until it is double in size.
Step 3 :
Sauce preparation: In a pan add chopped tomato, salt, ketchup, sugar, oregano and chilli flakes. Let it cook for 10 minutes until all the tomato puree gets dried enough.
Step 4 :
Base preparation: Once the dough rises, double in size. Tap it and roll it out using a rolling pin. Roll it to make a 12 inch pizza base.
Step 5 :
Rub olive oil on the baking tray to avoid it from sticking at the bottom. Place the base in the tray. Now stretch it outwards from the edges on the plate. Keep the cheese cubes on the perimeter. Cut each cheese cubes into 3 rectangle cubes and put each of them on the perimeter.
Step 6 :
Now roll the extended base back and press it gently. Cut 2 inch pieces along the whole perimeter. Pull each piece and fold it by 90 degrees.
Toppings on base: Now apply the pizza sauce and all the toppings.
Step 7 :
Spread mozzarella cheese. Now bake it on 200°C in a preheated oven for 10 to 15 minutes. Sprinkle oregano and chilli flakes and it is ready to served.
