Traditional Thai Coconut Pudding or Kanom Krok is a Thai dessert recipe. It is a pudding with two layers one that is golden brown and crispy on the outside and the other that is soft and sweet on the inside.

Step 1 : To make the base

Add shredded coconut, 100 gms of rice flour, palm sugar, 1/2 tsp salt, 3/4 cup of coconut milk to a blender and blend until smooth.

Step 2 : To prepare the filling

Combine 3/4 cup of coconut milk, sugar, 1/2 tsp salt and 2 tbsp rice flour in a bowl and mix it well together.

Step 3 :

To make these puddings, use an appam pan. At first, grease each mould with oil and heat it on low flame. Don't forget to grease before every new batch.

Step 4 :

Once the pan is sufficiently hot, fill 1/3rd of every mould with the batter prepared for the base.

Step 5 :

Wait for a few seconds and pour the filling into the center of the already filled moulds. If using a spoon to add the filling, dunk it into the center and wiggle the spoon a bit.

Step 6 :

Let the puddings cook on low flame till the custard-like filling looks set and is not runny anymore. The base should be golden brown and crispy. Remember to top each pudding with spring onion when the filling looks halfway done.

Step 7 :

When the puddings look almost done, but the top has not set fully, cover the pan and cook for a minute or two.

Step 8 :

To take out the puddings, use a toothpick and lightly push each pudding from one side and insert a rounded spoon underneath to lift it.

Step 9 :

Place each Kanom Krok on a serving dish and serve it hot.
