Sauteed french beans and baby potatoes, served with a savoury peanut dipping sauce for the ultimate taste sensation.

Cooking Steps

Step 1 :

Trim the ends of french beans and blanch in boiling water with some salt and oil to retain its colour for 3 minutes.

Step 2 :

And then immediately wash with cold water to stop further cooking.

Step 3 :

Pressure cook the washed baby potatoes with some salt for 2 whistles. Cool and peel off the skin.

Step 4 : To prepare Thai peanut sauce

Mix peanut butter, coconut cream, coconut milk, soy sauce, Thai red curry paste, brown sugar, lime juice, sesame oil and crushed garlic together.

Step 5 :

Use more or less almond milk to adjust the consistency.

Step 6 :

Saute baby potatoes and french beans in some oil for 2 minutes.

Step 7 :

Place the sauteed veggies in a serving plate. Drizzle generous amount of Thai peanut sauce over the veggies.

Step 8 :

Garnish it with roasted peanuts, roasted coconut flakes and sesame seeds.
