Palak ki Khichdi

Palak ki Khichdi is a winter comfort food that is preapred from spinach leaves and rice.

Step 1 :

Wash rice and urad dal and boil it in a pressure cooker by adding salt and turmeric powder.

Step 2 :

Alongside, boil 1 bunch of spinach and make a puree out of it.

Step 3 :

Turn off the pressure cooker after 3-4 whistles and let the dal and rice rest for a couple of minutes.

Step 4 :

Chop the onions, green chillies and tomatoes, mash garlic pods, and grate a cube of ginger, and keep it aside.

Step 5 :

Heat mustard oil in a kadhai.

Step 6 :

Once the oil is heated, add cumin seeds, garlic, ginger, green chillies, and onions and stir it on low to medium flame.

Step 7 :

Then, add turmeric powder, coriander powder, red chilli powder, and salt and mix it well. After a while, add tomatoes and stir well.

Step 8 :

Add the spinach puree and keep stirring for 7-10 minutes so that it blends well.

Step 9 :

Once cooked, add the boiled dal and rice and give it a final stir. After 2-3 minutes, cover the kadai with a lid.

Step 10 :

Once the evaporation takes place, it means that the khichdi has been cooked. Open the lid and give it a stir.

Step 11 :

In a small tadka pan, take 2-3 tbsp of ghee, add little bit cumin seeds and dry red chillies. Saute it for few seconds and pour it on the khichdi.

Step 12 :

Turn off the gas and cover the lid for 2-3 minutes. The delicious Palak ki Khichdi is ready. Serve it hot with curd and papad.
