Grind almonds, cashew nuts, whole black pepper, fennel seeds, poppy seeds, cardamom pods and saffron strands into a fine powder.

In a bowl, add flour, 1/2 cup of Thandai powder and ghee and mix well. Divide this mixture into three portions.

Add food colour of your choice to each flour mixture portion and knead each separately.

Divide each of the three doughs into small balls. Roll out each ball and cut out small roundels with the help of a cookie cutter.

With the help of a knife, cut each roundel into four halves. Repeat the process for each differently coloured dough.

Arrange five to six pieces or halves with alternate colours vertically from top to bottom placing the pieces one above the other leaving a little space on top.

When all the pieces are in one line, press the center of the pieces together with a knife to hold them together.

Then, start folding them from bottom to top to give them the shape of a rose.

Slightly pull out the top edge of each rose petal. Repeat the process to make more rose-shaped mathris.

Heat oil in a frying pan and fry mathris on medium low flame till they are cooked properly.

Add 1 cup of water, sugar and cardamom powder in a separate pan. Continue heating it till the sugar dissolves and make a thick one string syrup.

Now, dip the fried mathris in syrup and take out after 1 minute.
