Baba Ganoush is usually served as an appetizer. It can be used as a dip or a spread and is typically served at room temperature. Pair it with pita bread, crackers or chips for a mouth-watering appetizer that your guests will love.

Step 1 :

Roast the eggplant over an open flame to produce a rich smoky flavor. Once it is charred on the outside switch off the flame and keep it aside.

Step 2 :

Place the roasted eggplant pulp into a bowl with half of the smoky cooking liquid. Discard the skin and reserve the remaining cooking liquid. Let the eggplant return to room temperature.

Step 3 :

Add tahini, garlic, fresh lemon juice, cumin, salt, chilli powder and 1 tbsp extra virgin olive oil to the bowl.

Step 4 :

Use a fork or spoon to mash together the mixture, using firm pressure to break up the tahini paste, roasted garlic, and any stringiness of the eggplant.

Step 5 :

Mix until well combined. The texture is most authentic when using a fork to mash.

Step 6 :

Taste the dip. Add additional tahini, lemon juice, salt or chilli powder, if desired.

Step 7 :

Drizzle with olive oil, a small amount will do. Garnish with fresh parsley. Serve as a dip with pita bread, crackers or chips. If preferred cold, chill it in the refrigerator in an airtight container prior to garnish.
