Pumpkin Coconut Rolls

Deep fried crispy rolls stuffed with coconut and pumpkin stuffing seasoned with chillies, ginger and a hint of lime, a snack for any occasion.

Step 1 : For the stuffing

In a mixing bowl, add 2 tbsp grated fresh coconut, 2 tbsp grated pumpkin, 1/4th tsp green chilly paste, 1/4th tsp grated ginger, 1/4th tsp salt, 1/2 tsp lemon juice, 1/2 tsp coriander leaves and mix well.

Step 2 : For the outer cover

In a bowl, add 1/2 cup boiled, mashed potato, 1 tbsp corn flour.

Step 3 :

Knead into a dough.

Step 4 :

In a small portion, stuff the mixture and shape into rolls.

Step 5 :

Coat with 2 tsp breadcrumbs and deep fry until completely cooked and turns light brown on the outside.

Step 6 :

Serve hot with ketchup or chutney.
