Orange and Fresh Turmeric Pulao

This recipe combines a traditional vegetarian pulao from Bengal with a 'secret' ingredient. This ingredient is fresh turmeric root taken directly from the plant. It is easy to grow turmeric plants in a small kitchen garden. The fresh root has a very delicate flavour that is absent in the dried variety, usually available at the grocers. This delicate flavour combines well with the flavour of oranges giving the pulao an exotic touch.

Step 1 :

Heat ghee in a wok, add garam masala ingredients, fry till fragrant;

Step 2 :

Add rice, salt and sugar, sauté for 2 to 3 minutes.

Step 3 :

Add 6 cups water, fresh turmeric and saffron.

Step 4 :

Cover and cook until rice is done.

Step 5 :

Add orange juice, cover and turn off the heat. Keep covered for another 15 minutes.

Step 6 :

Serve hot.
