Moti Pulao is one of the royal dishes which Royal cooks used to make to impress their king. Moti is the edible pearl made using meat, eggs, paneer and coated with silver foil. Then they are dumped in saffron flavoured rice rich with dry fruits.

Ingredients

200 gm Cottage Cheese 0.25 Cup Cashew Powder

2 tbsp Corn Flour 0.25 tsp Salt

0.05 Cup Oil 300 gm Basmati Rice

2 pieces Bay Leaves 1 tsp Jeera

1 tsp Garam Masala 3 pieces Saffron

3 tbsp Ghee 0.25 Cup Milk

2 pieces Green Cardamom 1 pieces Black Cardamom

1 pieces Cinnamon Stick 4 pieces Cloves

1 pieces Star Anise 5 pieces Almonds

5 pieces Raisins

Cooking Steps

Step 1 :

Cook the rice till 90 % done in enough water. Drain and keep aside.

Step 2 :

Mix cottage cheese, cashew powder, salt and corn flour. Knead them together to form soft dough. Pinch little and make small balls/motis.

Step 3 :

Now deep fry them till golden brown and drain on kitchen towel and keep aside.

Step 4 :

Roll them in chandi varq roll for the beautiful glitter and royal look.

Step 5 :

Heat non stick pan, add bay leaf, whole garam masala, shahi jeera and dry fruits, fry for some time till dry fruits get light brown colour.

Step 6 :

Now, add the drained rice, salt to taste and stir for some time.

Step 7 :

Pour saffron milk, garam masala and add the motis. Reserve a few for garnish. Cover and cook for 10 minutes in low flame.

Step 8 :

Serve hot with gravy of your choice and stun your guests.
