Rangeeli Veggie Chicken 65 Biriyani

This dish is a colourful take on the regular one. Tastes yummy but is also pleasing to the eyes. A perfect combination to curb your cravings and healthy eating.

Step 1 :

In a large bowl, wash and soak basmati rice.

Step 2 :

In each small bowl, add 1 lemon and add the edible food colors - red, orange, green and yellow. Mix well.

Step 3 :

Fill the pot with water on one burner, add 2 tablespoons of salt and allow to boil.

Step 4 :

Heat the cooker. Add oil.

Step 5 :

Once oil is hot, fry chicken to 80 percent and keep aside.

Step 6 :

In the same oil, add cardamom, clove, cinnamon stick and bay leaf.

Step 7 :

Add onions and sauté until golden. Add green chillies.

Step 8 :

Once onion is golden, add tomatoes and allow them to soften on simmer for 10 minutes.

Step 9 :

Mash the tomatoes with the ladle and add curd and allow it to cook for another 5 minutes.

Step 10 :

Add the cut vegetables along with ginger garlic paste, 1 tsp salt, masala powders, coriander and mint leaves, and mix well.

Step 11 :

Add 1 glass of water. Close the pressure cooker and leave it up to 4 whistles on high flame for around 15 minutes.

Step 12 :

Open to see if vegetables are cooked.

In the boiling water of the pot, add rice and cook it 80%. Then, drain the rice in a strainer.

Step 14 :

Heat the tawa and place the empty rice pot over it, add the ingredients from cooker to the pot, then layer it with rice.

Step 15 :

Add lemon, colours and ghee.

Step 16 :

Add the fried chicken. Add alternate layers of rice, veggies and chicken.

Step 17 :

Close the pot and place the cooker over it so that no steam escapes.

Step 18 :

Leave it on simmer for 10 minutes.

Step 19 :

Open and mix the rice and masala. Enjoy your yummy rangeeli veggie chicken 65 biriyani!!!!
