Apple & Paneer Bread Pudding

Prepared mostly in fall when the apples are just ripening. It's best eaten hot and freshly baked along with tea or coffee.

Step 1 :

Separate egg yolks and mix them with 1.5 tbsp. of sugar, cinnamon, and vanilla essence. Beat them to foamy consistency. Add lemon peel and 250 ml of milk. Mix well together.

Step 2 :

Spread butter on your baking dish first and then spread/cover with bread crumbs (sides also).

Step 3 :

Mix paneer with 1.5 tbsp. of sugar, raisins (soak them in warm water first), 50 ml of milk, and lemon peel.

Step 4 :

Peel and shred your apples, add a bit of lemon juice to avoid browning.

Step 5 :

Slice the baguette to approx. 1 cm thick pieces and soak them in the milk mixture - do not over soak them.

Step 6 :

Cover the bottom of your toasting pan with the soaked bread completely. Use also small bits to cover the gaps. Then add half of your paneer mixture, on top of that, half of your shredded apples. Cover again with bread and repeat the same with paneer and apples. Cover with the rest of the bread and pour over the milk mixture, if any left. Place in the oven and bake at 180°C for 20 minutes.

Step 7 :

Mix your egg whites with 1 tbsp. of sugar and beat it up, until you get a stiff merengue.

Step 8 :

Spread the merengue on your baked bread pudding and place it back in the oven. Bake it until the top is golden brown (that takes only few minutes, so watch it). Your dessert is ready to eat.
