Ragi Anjeer Tart with Sorghum Pista Custard

Cooking steps

Step 1 :

Take ragi, tapioca and salt in a large mixing bowl.

Step 2 :

Add anjeer paste, oil, maple syrup and mix well.

Step 3 :

Add water, knead the mixture well with hand to make a dough, and give it a ball shape.

Step 4 :

Carefully place the dough between 2 parchment sheets and roll it well.

Step 5 :

To make the base, remove the upper sheet from the rolled dough, cut it into optional shapes and sizes , cover it and store in the fridge for at least 30 minutes.

Step 6 :

Preheat oven and pick the base carefully using a flat spoon, place it on a baking dish and bake tat 180 Degrees for 15 to 20 minutes.

Step 7 :

Meanwhile, dry roast the sorghum flour in a pan. Once done keep it aside to cool.

Step 8 :

Take milk in a large pan, add roasted Sorghum flour with some sugar and mix well. Once done, add corn flour, agar agar powder, pista powder in the milk, and mix it properly.

Step 9 :

Keep the pan over the gas on low flame and cook till the mixture starts to get thick and creamy in texture.

Step 10 :

Add some finely chopped pista.

Step 11 :

For assembling, take a mold, arrange the baked base on it properly, and pour the milk mixture according to your requirement.

Step 12 :

Keep it in the fridge to set for at least 90 minutes.

Step 13 :

Now remove the mold carefully, and your "Ragi Anjeer Tart with  Sorghum Pista Custard", is ready to be served. Garnish it with some freshly chopped pista and enjoy.
