A tasty and healthy upgrade of rice handvo

Cooking Steps

Baked jowar handvo

Step 1 :

Wash and soak mix dal with jowar separately for 8-10 hours. Add methi seeds in jowar while soaking.

Step 2 :

Wash again and grind them separately. Keep the batter a bit thicker than the idly batter. Mix both the batters and let it ferment for 6-8 hours depending on the climate.

Step 3 :

After the batter is fermented, you can keep it in the fridge for 1-2 days.

Step 4 :

To make handvo, add grated dudhi/lauki, ginger+green chilly paste, curd, crushed corn kernels, sugar, salt and cooking soda in the batter and mix well.

Step 5 :

Preheat the oven.

Step 6 :

Prepare the tempering. Meanwhile, heat the oil. Add all the ingredients for tempering.

Step 7 :

Grease the oven tray/cake box. Spread 1/4th of the tempering at the bottom of the tray.

Step 8 :

Pour the handvo batter on top. Spread remaining tempering on the top of the batter.

Step 9 :

Bake in the oven as per the setting. .

Step 10 :

Tasty and healthy Gujarati Handvo is ready for indulgence. Serve it with green chutney or imli chutney
