Moong Dal Brownie with Saffron Tres Leches

A healthy and tasty eggless chocolate brownie made from moong dal.

Moong dal brownie with Saffron Tres leches

Step 1 :

Soak the Moong dal for atleast 4 hours, remove water and transfer the dal to a mixer jar and grind coarsely. Transfer the ground dal to a mixing bowl.

Step 2 :

Add curd and sugar, whisk it for 5 to 8 minutes. Cover this mixture and keep it aside for atleast 10- 15 minutes to rest.

Step 3 :

Sieve all purpose flour, cocoa powder, salt and keep it aside.

Step 4 :

Take Chocolate in bowl and melt it in microwave for 40 seconds. Add some butter (saving some) and mix well.

Step 5 :

Add dry sieved ingredients in moong dal bowl.

Step 6 :

Add melted chocolate and butter mixture in moong dal bowl and mix it well.

Step 7 :

In a bowl, add baking soda & remaining butter. Mix and transfer it to dal mixture. Give it another good mix and immediately transfer it to a greased baking dish. Sprinkle chopped dry fruits over the batter.

Step 8 :

Bake the batter in preheated oven for 30 to 35 minutes at 180*.

Step 9 :

For Saffron syrup, add whole milk and already thickened milk, and sugar. Add a few saffron strings and cook till it reduces to 3/4 of original quantity. When done, switch of gas and keep aside till it cools.

Step 10 :

When cooled, add rose petals, saffron syrup and whisk the mixture till it combines well.

Step 11 :

When brownie is cooked, keep it aside to cool. Then place the brownie back into a pan, poke/pierce holes on the brownie with fork.

Step 12 :

Pour the Tres leches syrup over the brownie and allow the syrup to soak.

Step 13 :

For frosting, add whipping cream and icing sugar in a large bowl. Whip the mixture till it peaks. Add saffron syrup and lemon yellow colour to the frosting and mix again lightly.

Step 14 :

Frost the brownie with saffron cream, garnish and serve.
