Thai Green Coconut Curry Chicken Meatballs bursting with flavour and completely addicting. The irresistible Thai flavour of this dish will have everyone convinced you picked it in a Thai restaurant. It’s an added bonus that they’re healthy and made with fresh ingredients.

Step 1 :

In a large mixing bowl, combine all the meatball ingredients.

Step 2 :

Use an ice cream scoop to scoop out some mixture and roll it between your two hands a few times to roughly form a 5cm ball. Repeat the process until all the balls are done.

Step 3 :

Bake the meatballs for 15 min at 180 degrees till light brown on the top or fry till light golden brown.

Step 4 :

In a large wok or a large pan, heat oil over medium. Add thick coconut milk and simmer for 5 minutes, keep stirring.

Step 5 :

Add the Thai green paste and fry for another 7-8min till the oil leaves the side.

Step 6 :

Add in the meatballs one by one and stir the gravy till combined. Add the palm sugar, fish sauce, and red pepper juveniles and leave it to simmer for another 3-4min.

Step 7 :

Now pour in the thin coconut milk and mix everything till form a uniform curry.

Step 8 :

Add in coriander leaves, lemon grass, basil leaves, and pandan leaf for authentic Thai flavour. Add lemon juice to enhance the taste.

Step 9 :

Leave to simmer for 15 minutes to ensure the meatballs absorb the flavour. The longer you leave them to simmer in the curry, the softer and more succulent they’ll become.

Step 10 :

Garnish with basil leaves and lemon slice and red chilli. Serve hot with Thai sticky Rice or Thai noodles.
