Coconut Tapioca Pudding with Strawberry Compote

A delicious Thai dessert with strawberry compote and coconut milk cooked with spices and herbs.

Step 1 :

Soak the Tapioca pearls in water for 4 hours.

Step 2 :

Make strawberry compote by cutting the berries into small pieces and cooking with sugar and salt along with lime juice.

Step 3 :

Take a pan and cook the ginger and lemon grass with thin coconut milk for some time. Strain it and discard the ginger and lemon grass.

Step 4 :

Now add the soaked tapioca pearls, and shredded coconut and cook it with sugar, after some time add the thick coconut milk and cook for some time.

Step 5 :

Further, add the Thai basil leaves. Let the Tapioca cool down and keep it in the freezer for some time.

Step 6 :

To assemble the dessert, first, pour the tapioca pearls into a jar, then put a strawberry slice pour again tapioca, and add the strawberry compote.

Step 7 :

Garnish with basil or mint leaves, coconut slice etc. Serve cold.
