For Raw Mango Murabba Candy

Step 1 :

Heat 1 cup of water in a pan, add the mango pieces and cook on low heat for 4 to 5 minutes until the mango pieces are a little soft. Drain and keep aside the mango pieces and retain the mango stock.

Step 2 :

In the same pan, combine the sugar in the mango stock and cook on low heat until the sugar has dissolved. Stir occasionally. Add the mango pieces, half of the saffron, cinnamon and cloves to the sugar syrup and cook over a slow flame till the syrup is of two-string consistency.

Step 3 :

Reduce the heat to medium and cook, stirring frequently, until the sugar syrup looks dry, has almost evaporated and begins to recrystallize.

Step 4 :

After transferring the mango pieces to a cooling rack, ensure to separate the individual pieces. Once they have completely cooled down, proceed to dry them in the sun.

Step 5 :

Once dried, mix green cardamom powder, and the remaining saffron with Boora or powdered sugar. Coat each slice of mango with it. Store in an airtight jar and enjoy.

Step 6 : Suggestion

They can be preserved only once the mango slices have been completely dried and coated with Boora or powdered sugar.
