In a mixer jar add the washed and soaked urad dal, ginger, salt, green chilli and turmeric and blend to a coarse mixture. Do not add any water to it.

In a mixing bowl add the wheat flour, salt, oil, turmeric, red chilli powder, fennel seed powder, coriander powder, ajwain, and kasuri methi and using a little water knead a stiff dough.

Divide the dough into equal-sized balls, and flatten them slightly, now take a scoopful of the urad dal mixture and place it in the flattened dough. Cover the dough with the filling inside it.
Step 4

Roll it gently into a poori and fry on medium-high flame. To get hot puffy pooris.
For Aloo Sabzi
Step 1

In a kadhai, heat the oil, temper it with jeera, ajwain, fennel seeds. Then add the green chillies and ginger. Next add the dry masala, turmeric, red chilli, coriander powder and roast everything.
Step 2

Now add besan and roast it for a minute. Add tomato puree and salt and cook everything well. Let the puree cook for a few minutes.
Step 3
:
Finally, add the potatoes and mix everything well. Add some water if needed.
