Green Shakshuka is a vegetarian delight originating from Middle Eastern cuisine, perfect for a hearty brunch or light dinner.

Green Shakshuka

Step 1 :

In a blending jar, add the green peas and spinach and blend them together to form a paste.

Step 2 :

In a saucepan, heat some olive oil, and add the minced garlic followed by chopped onions. Cook until the onions turn translucent.

Step 3 :

Now add the blended green mixture and cook it for a minute. Season with salt and pepper.

Step 4 :

Once everything is cooked and soft, crack the eggs over the green base. Cover and cook until the eggs are cooked to your liking.

Step 5 :

Finally, top with crumbled feta cheese and serve with toasted bread.
