Ghee Roasted Spicy Potatoes

Perfect for spice lovers, this Ghee Roasted Spicy Potatoes recipe combines the nutty, buttery flavour of ghee with a spicy kick, making it a finger-licking good side dish. Crispy on the outside and soft on the inside, these potatoes are a guaranteed hit!

Ghee Roasted Spicy Potatoes

Step 1 :

Wash and peel the potatoes and chop each potato into 4 pieces each. Now take a pot add water and add generous amounts of salt. Once the water boils add the chopped potatoes to it. Allow them to boil for about 7 minutes or until they are just softened but not completely boiled. Remove from the water and keep aside.

Step 2 :

In a saucepan, add some ghee and place it on low flame. Coarsely grind the cumin seeds and coriander seeds and add them to the hot ghee. Add the garlic and onion. Let the garlic fry. Then add red chilli powder and turmeric powder.

Step 3 :

Now add the potatoes, and very gently toss them, take care not to mash them. Once the potatoes are coated well reduce the flame, Add salt and black pepper powder and let the potatoes roast on a low flame.

Step 4 :

Once they get a light golden brown coating, dust it with amchoor powder and give it a quick toss.

Step 5 :

Transfer to a serving bowl and garnish with fresh coriander. Serve hot.
