Prepare the dough
Step 1 :
Boil water in a pan with salt and ghee.
Step 2 :
Add rice flour gradually, stirring continuously until the mixture forms a lump.
Step 3 :
Switch off the flame and let it cool slightly.
Step 4 :
Knead into a smooth, soft dough while still warm.
For stuffing
Step 1 :
Pressure cook chana dal until soft.
Step 2 :
Heat oil in a frying pan. Add mustard seeds, red chilli and asafoetida. Once they splutter, add curry leaves and turmeric powder.
Step 3 :
Add the cooked chana dal, grated ginger, and grated fresh coconut. Mix well, mashing the dal slightly with the back of a ladle.
Step 4 :
Add salt to taste and adjust seasoning. Remove from heat and let it cool slightly.
For modak wrap
Step 1 :
Grease your hands. Take a lemon-sized portion of the dough and flatten it with your fingertips.
Step 2 :
Place a small ball of the stuffing in the centre and fold the edges over to cover the stuffing completely. Shape into a modak using your hands or a mould.
Step 3 :
Steam the modaks in a steamer for 8-10 minutes.
