Prepare the dough (Modak wrap):
Step 1 :
Boil water in a wide vessel. Add ghee and a pinch of salt.
Step 2 :
Add rice flour while stirring continuously to avoid lumps.
Step 3 :
Once it forms a smooth lump, add green food color and pan essence. Stir well.
Step 4 :
Remove from heat, let it cool slightly, and knead into a smooth dough.
Prepare the stuffing:
Step 1 :
Take another pan and warm up the ghee. Add grated raw mango, raisins and sugar. Cook well till the mixture dries up.
Step 2 :
Now add gulkand and cook well till there is no moisture. Take off from heat and cool thoroughly.
Shape, steam, and serve:
Step 1 :
Divide the dough into small portions and flatten each into a disc. Place a ball of stuffing in the centre, fold the edges over, and shape it into a modak using a mould or by hand.
Step 2 :
Steam the modaks for 8-10 minutes in a steamer with boiling water. Let the modaks cool slightly and serve.
Step 3 :
Tip: Keep the water boiling in the steamer. Place the modaks only when the steam is formed.
