Prepare the Dough:
Step 1 :
Take a wide plate, and add maida/whole wheat flour, salt and ghee.
Step 2 :
Mix well and gradually add chilled water to knead into a hard dough, similar to kachori dough.
Step 3 :
Cover and let it rest for 15 minutes.
Prepare the Stuffing:
Step 1 :
In a bowl, crumble the fresh chenna until smooth.
Step 2 :
Add the chocolate spread, chopped mixed fruits and nuts, and cinnamon powder.
Step 3 :
Taste and adjust the sweetness by adding powdered sugar if necessary.
Step 4 :
If the mixture is too wet, add bread crumbs, sooji, or desiccated coconut to absorb excess moisture.
Step 5 :
Place the stuffing in the freezer for 15-30 minutes, depending on the weather, to firm up.
For Modak Wrap:
Step 1 :
Divide the dough into small portions and roll out into small discs.
Step 2 :
Place a small ball of the prepared stuffing in the centre of each disc.
Step 3 :
Carefully shape the discs into modak shapes, ensuring the stuffing is well-sealed.
