This recipe symbolises the "Unity in Diversity" of India, diverse flavours (kesar, pista & kaju), different colours & differently shaped gaintha pithas unite in flavoured Khira & served.

Cooking Steps

Kaju Kesar Pista Khira Gaintha Pitha

Step 1 :

To begin with preparing the tri-coloured flavours, for saffron flavour & colour in a small bowl add warm milk & saffron strands, keep it at room temperature for 30 minutes/ till the milk turns saffron coloured.

Step 2 :

For pista flavour/green colour soak pistachios in warm water for 10 minutes then blend soaked pistachios with water till a smooth paste is obtained, keep aside.

Step 3 :

For cashew flavour/white colour soak cashews in warm water for 20 minutes then blend the soaked cashews with water till smooth paste is obtained, keep aside.

Step 4 :

In a pan boil water with bay leaves and a pinch of salt. Once the water comes to a boil, remove the bay leaf.

Step 5 :

Divide the rice flour into 3 equal parts, mix the prepared kesar, pista & cashew flavours to to 3 rice flour parts, Now add the 3 coloured rice flours separately to the water to make a paste. Mix well and make sure there are no lumps.

Step 6 :

Now knead the three different coloured & flavoured rice dough separately, using different shapes of cookie cutters shape the dough portions, gaintha pithas are ready, keep aside.

Step 7 :

To make khira in a pan boil milk, Add bay leaves, grated coconut, condensed milk, saffron strands & crushed cardamom to it, continuously stir for 10 minutes on medium flame, Make sure the milk reaches a nice semi thick consistency & khira is ready.

Step 8 :

In a bowl pour khira and place tri-coloured /tri-flavoured gaintha pithas, garnish with pistachios, cashews, saffron strands & serve.

Step 9 :

It's served both hot or cold.
