Coconut Pineapple Rice with Hot Paneer Curry

Inspired by Malabari and North Indian flavors, a unique combination of contrasting tastes - mildly sweet rice and a spicy vegetarian curry.

Method

Step 1 :

Soak basmati rice for 15-30 minutes.

Step 2 :

In the vessel meant for cooking the rice, first heat ghee on low flame and fry the cinnamon and cardamom for 30-45 seconds. Stop as soon as the spices start releasing aroma.

Step 3 :

Immediately add the strained soaked rice, pineapple juice, coconut milk, and sugar. The rice is not to be strained after cooking. Only if required, add some water.

Step 4 :

Cook on slow-medium flame for 15-20 minutes or until the rice is properly cooked. The mixture may be stirred gently for 1-2 times while cooking, but do not stir too often.

Step 5 :

After the rice is cooked, take it off flame and leave it covered for 5-10 minutes.

Step 6 :

The cooked rice (for serving) will be slightly starchy, which is normal/expected. Coconut Pineapple Rice is ready to serve.

Method

Step 1 :

Cut paneer into small cubes.

Step 2 :

In a pan, heat the oil and add star anise, bay leaf, and cloves.

Step 3 :

After the spices are slightly fried (they release aroma), add the tomato puree and onion paste.

Step 4 :

Add ginger paste and garlic paste.

Step 5 :

Add all other spices, i.e. chilli powder, garam masala, coriander seeds powder, cumin seeds powder, salt, and sugar.

Step 6 :

Cover with lid and let the mixture cook for 5-7 minutes on slow-medium flame.

Step 7 :

Add paneer cubes and mix properly with cooked curry. Cover the vessel with lid and keep it on slow-medium flame for 2-5 minutes.

Step 8 :

Take it off the flame and the Hot Paneer Curry is ready to serve.

Serving

Step 1 :

Arrange the rice in ring form, and place the curry in the center. The curry can be served either in a bowl or directly in the rice ring or rice and curry side-by-side as would be appropriate for airlines.

Step 2 :

Garnish the rice with pineapple pieces and desiccated coconut powder, and some chopped coriander leaves.

Step 3 :

Garnish the paneer curry with whole coriander leaves.
