Mangalorean Pathrode with Quaker Oats

Pathrode is a mangalorean delicacy especially prepared in the month of monsoon as the colacasia leaves are plenty during this season! This one is a special recipe as this has been made with oats.

Method

Step 1 :

Wash and soak rice and green gram for about 4 hours. Strain it and grind along with red chilly and tamarind into a thick dough. Add salt and mix well.

Step 2 :

Clean the colocasia or palak leaves and cut them into fine strips. Mix the leaves into the rice dough and mix well.

Step 3 :

Add quaker oats to this mixture and mix thoroughly.

Step 4 :

In a steaming pot, heat water. Spread a banana leaf in the pot over the tray and spread the dough evenly and steam for about 15 minutes or until cooked and set aside.

Step 5 :

Dry roast onion, chillies, pepper corns, coriander seeds, cumin, mustard, cinnamon, cloves, fenugreek individually until raw aroma fades.Dry roast Coconut until golden brown in colour.

Step 6 :

Combine all the dry roasted ingredients along with tamarind and turmeric powder. Add litlle water and blend into a smooth masala.

Step 7 :

In a heavy bottomed vessel pour the masala. Adjust it to medium thick consistency by adding water. Add little salt and bring to a boil and add sugar as well.

Step 8 :

Cut the cooked pathrode (cake) into bite size pieces. Add these pieces into the boiling gravy. After a good boil. set it aside.

Step 9 :

Heat a pan with ghee or coconut oil. Fry thinly sliced onion until golden brown. Pour this seasoning over pathrode gravy.

Step 10 : For Seasoning

Serve Mangalorean Pathrode made with quaker oats while warm. Few pieces of oats pathrode could be fried in little ghee adding chilly paste.
